I taped a small video camera to a rocket and launched it. You can do this using a small keychain camera, commonly referred to an 808 camera, spy camera, or key fob camera. They're often pretty cheap, small, and lightweight, and you can attach them to model rockets or high power rockets with simple electrical tape.
I know, that sounds like it might not work - like the tape wouldn't hold. But it really does! Not only does it hold the camera on securely, it peels off easily and won't damage the paint (although I'd be careful taping over decals, as they may peel off).
Model rocketry is a great STEM hobby for adults or kids. It's fun, it's safe, and it will get you making things with your hands and get you outdoors to fly them. There are rocketry clubs all over the country and all around the world which will help you get involved. If you're in the United States, you can check out the National Association of Rocketry for club information: www.nar.org
Outside the U.S., just do a google search for rocketry clubs near you. You may find your country has its own association, or has clubs as part of the Tripoli Rocketry Association: https://www.tripoli.org/
